I’m using GDrive and Dropbox on macOS for Plex which work but i wonder if the fuse stack provide the same performance or can i get better performance by switching to other os like ubuntu or Windows?

The order from what I've seen from people posting in terms of use:
Linux, Windows, MacOS.
Fuse has been around on Linux forever and works very well. Windows isn't bad and has a great support community as well. MacOS is a little bumpy as there have been changes to that and with the last OS update, it requires a bit more baking.
That's my two cents anyway as I use Ubuntu.
