Right now i'm thinking in a new project. I want to use a fileserver available from internet and I want to use a "rclone mount" from the client side in order to access the files.
What is the best SW I should install in the server side in order to do this?

what does best mean in your use-case??
what OS is the server?, what OS is the client?
can use sftp, webdav, smb/samba, nextcloud, minio or so many other choices.
The server could be linux, windows or freenas. In the client side i will use windows.
When I say "best" I mean the best behaviour, stability and speed between server and client (rclone mount)
what would be your bet?
i would not use rclone at all.
server: if windows, then native smb. if linux/freebsd then samba.
use tailscale/wireguard/openvpn/whatever...
